If you are entering these visits in your EHR/EMR, you may consider creating a fake provider for workshops. This will segregate revenue, visits, stats for your workshop stats.
You may consider making 2 kinds of appointment purposes. Such as "workshop - w guest" and "workshop no guest" to get metrics of how many patients are bringing a guest to the workshop.

First, let's explain a couple of concepts first
Labels
A label allows you to aggregate multiple data totals into a single label.
For example, if you are tracking referral sources from Google, Facebook and SEO, you could aggregate the total from all three into a single label called digital.
You could take all your products sold in your services label and create a label 'products.' This allows you to get a total collection of products sold in your office rather than looking at all of them individually. You could do the same with specific modalities as well.
Show/hide, Renaming, Gear icons and Tag Filters
If you do not track 5-star reviews, testimonials, reactivations, net momentum, hide those areas
If you click on a stat name or a section name, you will notice you can rename them
Gear icons allow you to select labels - this allows you to look at statistics by subsets of referral sources of patients, appointment purposes/types, and services. Multiple gear icons are listed on different rows that will be associated with that label(s).
Tags - allow you to exclude patients with a tag or only look at patients with that tag. This allows you to filter out treatments of employees or barter patients in your stats. You could look at stats by a particular niche.
Current Month, Previous Month, Goals, & Accountable Person
Current month - is the month you are looking at
Comparison month - defaults to the previous month, but you can look at the same month in the previous year
Goal - the goal is for the month, and it will show you the variance from your goal.
% change - shows you the percentage change from the current month and the comparison month
